How can a food sensitivity / intolerance cause heartburn?

Hello, I’ve been reading on the internet that a sensitivity or intolerance to a certain type of food (ie: corn, egg, soy, dairy, etc.) can actually cause heartburn. How exactly does this occur? Is the stomach just releasing an excess of stomach acid in an effort to digest the un-tolerated food protein? Or is it something to do with esophageal motility, peristalsis, or maybe release of bile or something?
